If you have been a long time follower of my blog, you know that 2020 was not only the year of Covid, but also the year of cooking, I had a Yogurt Lemon Loaf recipe that went viral with over 54,000 views and over 25,000 shares. Then as life slowly but surely returned to normal, my cooking/baking spree came to a halt, but my passion for nutrition and health did not. This year along with renewing my nutrition certification, I decided to get certified as a personal trainer to further help people on their health and wellness journey. SO back to the most delicious chicken skewers and sharing this recipe with you all.
Greek Chicken Skewers
Equipment
- Indoor Grill
Ingredients
- 1 Package Chicken Tenderlions
- 1/2 Lemon
- 28 g Feta Cheese
- 1 Zucchini
- 1 Orange Bell Pepper
- 1 Yellow Bell Pepper
- 1 Red Pepper
- 1 Red Onion
- 1 tbsp Olive Oil
Instructions
- Prep Chicken Tenderloins (I like to remove the tendon with a fork) and dash salt and pepper to taste (squeeze lemon on chicken-optional)
- Chop peppers, zucchini and onion for skewers
- Pre-heat Indoor Grill to 400 degrees and once heated add all vegetables and chicken
- Flip chicken and check until cooked through on both sides
- Remove vegetables once grill marks are evident and then once cooked remove chicken
- Cut chicken into squares and add each ingredient to skewer
- Top with feta cheese and serve with a large salad or vegetable of choice for a healthy main.
