Welcome to another What I eat in a day blog post! I love writing these because they help hold me accountable. The past few days were rough because I made the mistake of weighing myself on my (not so) smart scale. I was definitely discouraged to find out that I hadn’t lost any weight despite exercising and drinking cauliflower for breakfast. Which I do enjoy but none the less! I’ve said it before and I will say it again..nothing and I mean absolutely nothing good comes from weighing yourself. If the numbers up you’ll under-eat and if the numbers down you’ll over eat. I’m trying really hard to go by how I feel and look rather than letting a number define how I feel about myself. So with all of that said, let’s dig in to What I Eat In A Day!
BREAKFAST
- Strawberry Cauliflower rice smoothie
- 3/4 cup Scrambled egg whites
Thoughts: I used frozen strawberries in my smoothie this time, and let me tell you: GAME CHANGER! If you haven’t made this recipe yet you really need to bite the bullet and try it. You can’t taste the cauliflower! I promise.
LUNCH
- Mixed green salad
- Tumaro’s low carb quesadilla with Turkey and tomato
- Mix of peppers/cucumber/carrots sprinkled with ranch seasoning (NOT PICTURED)
Thoughts: If the picture below doesn’t make you inclined to make this delicious lunch then I really don’t know what will. It’s been on repeat because it’s not only filling, but it’s also a low carb easy to throw together lunch! Here is the exact recipe (just incase).
SNACK
- Fage 0% Greek yogurt mixed with Unsweetened vanilla silk almond milk and 1 sweet nothings chocolate crumbled on top (aka 30 calories of bliss..)
Thoughts: Did you like Oreo Mcflurries as a kid? If so give this a try. It’s the next best thing!
DINNER
- Zucchini Noodles
- Greek salad topped with balsamic Chicken breast
Thoughts: I have been loving chicken recently. I have it almost everyday. Don’t even ask!
Dessert
I’m a big believer in desert and love to finish the day with something sweet. Tonight I had a sugar free jello and 1 salted caramel enlightened bar!
