Aspen and I made these Jam Empire Biscuits for British Mothers day and since, I have eased up on the baking! Now you may be wondering why? To be perfectly honest, I absolutely love to bake. It has been really therapeutic for me, but I have launched my health coaching program which focuses on whole and hearty foods, so we might see some smarter swaps on these posts, just because I want to practice what I preach.
So let dig into these delicious Jam Empire Biscuits shall we? These classic Scottish sweet treats are made of two pieces of shortbread squeezed together with jam in the middle. To top it off I iced, and topped with a glace cherry. They were so fun to bake and photograph! What you need: Baking tray & cookie cutters .
Ingredients for Empire Biscuits
- 300g Plain flour (2 cups)
- 1 Egg
- 200g Salted Butter ( 1 cup)
- 100g Sugar (1/2 cup)
- Jar of Strawberry Jam
- 180g Confectioners Sugar
- Glace Cherries for decorating
Instructions
- Preheat the oven to 400 degrees
- Mix butter and sugar and mix until combined
- Add the flour along with a beatern egg and mix carefully until the dough begins to form clumps. Once this happens you can start to knead the dough with your hands.
- Lightly flour a surface and roll the dough out (if you don’t have a rolling pin you can find one on amazon or use a wine bottle!)
- Cut the dough into shapes and use a spatula to move the biscuits to the baking tray
- Bake for approximately 20 minutes. Take them out of the oven and allow to cool
- Match the biscuits into pairs. Spread jam over the top of the biscuit and put another one on top.
- Once biscuits are filled, Mix the icing/confectioners sugar with just enough milk or water to form a thick but runny consistency.
- Drizzle over biscuits and top with cherry!
