Growing up on Long Island, Mario’s Pizzaria was a staple. My go-to order was a Bruschetta slice or Marinara slice. My favorite part of pizza is always the sauce and as I’m going all out on a Pizza Rant, I might as well add in that my favorite pie is from Serafina on 61st between Madison & park. If you haven’t tried it then you absolutely need to. Anyway, as I no longer have my 22 year old metabolism and limit my carbs, I decided to recreate my favorite bruschetta slice with chicken leading to The Best Skinny Bruschetta Chicken! I made this recipe a few years ago and it was a major hit in the kitchen but major fail on instagram. I think I received about 12 likes.. but here we go again!
If you haven’t noticed by now, It’s rare that I post a savory meal-but this one was worth sharing. I created the marinade from scratch, placed it in the fridge for an hour to absorb and then cooked it on a pan. I placed it over a bed of Arugla and once cooled, chopped it into a salad. I’m also on a broccoli kick recently so paired it with some fresh steamed broccoli (not pictured). This recipe serves one, so feel free to double it if cooking for two, or if you want to store some leftovers in the fridge. Also I feel compelled to add in that one of my GF Paleo Chocolate Chunk bars would be the perfect dessert!
Ingredients
- 4-5 oz chicken breast or tenderloins
- Argula
Marinade
- 1 tbsp Balsamic Vinegar
- 1/2 tsp Salt
- 1tsp Onion Powder
- 1 tsp Garlic Powder
- 1 tsp Oregano
- 1 tsp Paprika
Bruschetta Topping
- 1/4th Small Red onion
- 1-2 Roma tomatoes (or baby tomatoes work)
- 1 Tbsp Balsamic
- Dash of Salt
- Dash of Basil
Instructions
- Add balsamic, salt, garlic, onion, oregano and paprika to a small rectangle container or bowl if dipping
- Dip/rub chicken into mixture until coated
- Once coated in marinade, place In fridge (covered) for 60 minutes
- Spritz olive oil spray onto grill pan add the chicken and once browning flip. Repeat twice until chicken is fully cooked. Around 10 -15 minutes or so
- Make the Bruschetta mix by chopping tomato and red onion into a small bowl. You can even cut it to get it into smaller pieces. Works like a charm!
- Add balsamic into Bruschetta mix and basil/salt. Mix well
- Place arugula on a plate and top with Chicken
- Top Chicken with Bruschetta mix (or chop into one big salad) and enjoy!
