Today in the kitchen we are baking The Best Morning Glory Muffins to date! Of course I can’t take credit for the name, they were originated by Whole Foods. Or at least that’s where I discovered them many years ago. According to their website, 1 Muffin contains close to 400 Calories, 24 Grams of Fat, 38 grams of Carbs and 18g of Sugar. Health coach approved? Not quite.
We were determined to re-create the recipe and swap some ingredients to make this recipe as healthy as can be. Even creating our own oat flour from scratch. As intimidating as it sounds, all you need is oats (of any kind) and a strong blender. Blend uncooked oats for 2 minutes and there you go! There’s no need to pay $20+ Dollars for a bag when you can buy a large 42oz container at target for $3.99.
Before jumping into the recipe, I’ll admit the photos look a little funky, but as they say: Never judge a book by it’s cover. These muffins are dense and delicious, guaranteed to make you excited for Breakfast!
INGREDIENTS
- 1 Cup unsweetened Apple Sauce
- 1/4 Cup Almond Butter
- 1/2 Cup Sugar Alternative
- 1 Teaspoon Vanilla Extract
- 1 Teaspoon Cinnamon
- 1/2 Teaspoon Ground Ginger
- 2 Cups Oat flour
- 2 Teaspoons baking powder
- 1 Cup Shredded Carrots
- 1/3 Cup Raisins
- 1/3 Cup Chopped Walnuts
INSTRUCTIONS
- Preheat oven to 350 Degrees
- Line muffin tray or grease well with coconut oil spray (or alternative)
- Mix Apple Sauce, Milk, Vanilla, Almond Butter and Sugar
- Once combined well add in Oat Flour, Cinnamon, Ginger, and Baking Powder
- Mix well and add in Raisins, Walnuts and Carrots
- Spoon about 9-10 Muffin holes with batter and bake for 20-25 minutes until a toothpick comes out clean
- Let cool and enjoy!
I couldn’t believe how easy these muffins were to make, and how much healthier they came out to be with a few swaps. This is usually the most accurate any ways as everyone has different Milk/Flour preferences.
