I’m not sure about you, but growing up I loved Poptarts. The classic flavors when I was a child were: Blueberry, Brown Sugar Cinnamon and Strawberry. Why did the vending machine ones always taste better than the ones in the foil packet from the box? I’m quite observant when I want to be (or when it comes to sweets), I know – I know. As Aspen is starting to have socially-distant playdates outside now that the weather is warming up I decided to bake The Best Homemade Strawberry Poptart’s for him and his friends! A bold claim, but really-you have to bake them!
They are honestly so easy to make with little ones or for little ones. I even made a video! Of course there are a ton of variations to change this recipe and make it a little bit healthier, but I decided to go all out (for the kids sake of course!). We also have a few other recipes on our radar to bake this weekend.
So lets talk variations, you can easily sub the package of pie crusts and make your own, switch out the Jam for a different flavor or a High Fiber/Low sugar option like Polaner and if you’re against confections sugar, use something similar like Truvia or Monk Fruit. Typically I love to make healthier versions of “unhealthier” childhood favorites, but for this one I wanted to make it quick and simple!
Ingredients
- 1 Package Pie Crusts
- 1/4th cup Jam of Choice ( I used Bonne Maman)
- 2 -3 Tbsp Milk of Choice
- 2 Cups Confections Sugar or alternative
- 1/2 Tsp Vanilla extract
- 1 Tbsp Of Sprinkles
Instructions
- Preheat oven to 425 degrees & line baking sheets with parchment paper
- Roll out each pie crust into a large rectangle (if you don’t have a rolling pin you can use a bottle of wine -ha ha)
- Cut 8 squares from Pie Crust (4 each)
- Place about 1 tbsp of Jam on 4 of the squares and spread evenly
- Once filled with jam place other square on top
- Use fork to crimp sides sealing in the Jam
- Once full, place in oven for 7-9 minutes until edges start to brown
- Take out of oven and let cool
- While cooling mix together confections sugar, vanilla extract and milk to make the icing
- Spread the icing on the cooled tarts and top with sprinkles!
