Guilty confession? I have craved Pancakes/Waffles/French toast all week long, which isn’t exactly a go-to breakfast on a low carb diet. So I decided to get creative in the kitchen and create a sweet omelet with berries. It may not sound appealing, but I was quite impressed with the photo and taste. I paired mine with a Greek yogurt for added protein.
Ingredients:
- 3/4 cup egg white
- 1/2 cup cauliflower rice
- dash of cinnamon
- Dash of Truvia
- 1/2 cup of berries
- Carry’s Sugar Free Syrup
- I Can’t Believe It’s Not Butter Spray (optional)
Recipe:
- Spray olive oil spray on a frying pan and add 1/2 cup cauliflower rice
- Once cauliflower rice is Turing brown, add 3/4 cup egg whites
- Flip omelette and once cooked and place on plate
- Add cinnamon, truvia, butter spray and syrup
- Top with slices strawberries and enjoy!
