I know what you’re thinking. How can this women claim to be on a diet and eat homemade mint chocolate chip soft serve ice cream for a snack. Well, don’t be fooled by the picture or the taste. This recipe is absolutely delicious and guilt free!
My favorite growing up was Baskin Robins Mint Chocolate chip ice cream. Don’t ask me why but it just brings back memories of two hour lengthy Gymnastics classes with my elementary school best friend. After every class three times a week we would either go to Burger king for a blue raspberry/coke slushy or head to Baskin Robins for ice cream. I always went all out and would put marshmallow on top of it. You know not the actual marshmallows but the jet puffed marshmallow cream. Oh what I would do to have my thirteen year old metabolism back!
INGREDIENTS
- Two good plain vanilla yogurt OR 170g 0% Fage Yogurt
- Sugar Free Peppermint Syrup
- 1-2 Tbsp Lily’s chocolate chips
- Optional (Stevia to sweeten)
RECIPE
- Mix two teaspoons of peppermint syrup into the yogurt. If you chose a plain two good yogurt, then I recommend mixing in 1 packet of stevia as well so that it’s not to bitter
- Add chocolate chips (More or less to taste. You can have 60 for 60 calories so I find that 20-30 is the perfect amount!)
- Stir together and place in freezer for 45-60 minutes. Half way through I like to check and give it a stir and that’s it! Homemade Mint chocolate chip soft serve.
