As the weather starts to turn in NY, this low-calorie (0 WW point) soup is perfect to throw together for an easy filling meal! I personally paired it with two pieces of low-calorie bread (My favorite is 647 white which is only 40 calories and 1 WW point per slice). This makes about 3 servings.
INGREDIENTS
- 4 cups Chicken Broth
- 1 tablespoon Minced Garlic
- 1 tablespoon tomato paste
- 2 cups chopped cabbage
- 1/2 white onion
- 1 cup carrots
- 1 cup green beans
- 1/2 chopped Zucchini
- 1/2 teaspoon Basil
- 1/2 teaspoon Oregano
- Salt & pepper to taste
HOW TO
- Spray pot with nonstick cooking spray and saute onions carrots and garlic for 5 minutes.
- Add broth, Tomato paste, cabbage, green beans, basil, oregano, and Salt & Pepper to taste.
- Simmer for 15 minutes until all vegetables are tender then add the zucchini and simmer for another 5 or so minutes.
