I”ll be the first to admit it – I have a sweet tooth! Whether it’s for breakfast, lunch or dinner, I’m always in the mood for something sweet. On Thursday I took Aspen out to lunch at one of my favorite places. Munday’s in Huntington NY. Think vintage diner with milkshakes, comfort food, and waitresses on roller-blades. Ok, fine there were no roller-blades involved but I can totally imagine that 30 something years ago there were! The smell of French toast was lingering and I decided to order a salad (typical me) and re-create my own “healthier” french toast at home.
Ingredients:
- 1 Egg White
- 1/4th Cup Milk Of Choice (I used 1%)
- 2 Slices Light Bread (I used 647 White Bread)
- Dash of cinnamon
- Dash of Vanilla Extract
- Carry’s Sugar Free Syrup
- Swerve Powdered Sugar
Recipe:
- Mix egg white, milk, cinnamon, and vanilla extract into a bowl.
- Grab your bread and carefully dip one slice (at a time) into the mix
- Heat a frying pan with butter spray
- Place your bread on your pan and flip occasionally watching for brown edges
- Once cooked, remove from pan and place onto a plate
- Cut into triangles and top with fruit of choice, syrup, and powdered sugar!
