If you’re looking for a Healthy Chicken Soup then look no further! This recipe is one of Aspens absolute favorites. It’s perfect if you have leftover chicken in the fridge, or (in our case) need to make some room In the fridge by throwing together an easy soup.
Unfortunately this soup was gone within two days, so I forgot to take a variety of photo’s – but I made a little Instagram Story which you can view below
INGREDIENTS
- 1 bunch celery
- 1 small white onion
- 1 tsp Minced garlic
- Rotisserie chicken breast
- 5 large carrots
- 1.5-2 containers Chicken broth
- Palmini Hearts Of Palm Noodles Chopped (optional)
- Lemon to Top (optional)
HOW TO
1) Dice onion and chop carrots and celery. Place aside
2) Spritz olive oil spray into cooking dish and add 1 tsp minced garlic and onion. Once browning add broth
3) Add carrots, celery, chicken and a dash of salt and pepper (to taste). If adding Palmini noodles – add these LAST – 30-40 minutes after vegetables are starting to cook (5-10 minutes before soup is done!) . Make sure to drain them in cold water for 5 minutes prior and then chop/add to dish.
4) Let veggies cook for 35-45 minutes and enjoy!
