Easy and healthy Chicken Pot pie. Oxymoron? nope. April fools? nope! I’m just a mum on a mission to make easy recipes. The past month has brought upon so many changes. Now that Aspens back playing soccer, it’s important that I cook proper dinners. He’s just about as picky as I am when it comes to eating these days, so when he actually tried and liked this recipe I was SHOCKED. The best part? It has minimal ingredients and can be cooked on a whim. If you’re following a specific diet or counting macros you could also eat the inside of the pie and skip out on the crescent roll topping. Anyway lets jump right into what you will need to coo this delicious Chicken Pot Pie that your friends/family will beg you to make!
INGREDIENTS
- Reduced Fat Crescent rolls
- Chicken Breast (I used two big breasts about 208g/7.3 oz)
- 1 can of 98% Fat Free Condescended Chicken soup
- 1 mixed bag of steam vegetables
INSTRUCTIONS
- Cook the chicken. All I did was spray some olive oil in my air fryer and cook for 25-30 minutes. Make sure to keep flipping them so that they cook thoroughly. You will know they are done once golden brown.
- Once chicken is cook let cool and shred/ cut. As Aspens so picky I had to take the skin off and then shredded.
- Cook veggies according to bag (usually its around 5 minutes or so)
- Pour soup, cooked veggies and shredded/chopped chicken into a bowl and mix well
- Preheat oven to 400 degrees
- Once mixed pour mixture into square or rectangle pan
- Unroll crescent roll package and lay on top of the pot pie mix. If there is left over put aside.
- Bake in the oven for 15-20 minutes until topping is golden
- Let cool slightly and serve.
We didn’t even measure the serving size so please don’t ask how many servings this makes, but I would say around 4-5 (If I had to guess!) Unfortunately I didn’t make a video of this recipe BUT the video attached below features the recipe towards the end, so you can see how delicious it looks and get inspired to bake.
