Where have I been? Now that the summer rush is over (work wise) it’s time to get back to blogging/writing/sharing my summer excitement.
I’ve wanted to write about so many topics recently: my first yoga class (this led to me never wanting to hear the word downward facing dog or warrior ever ever again), planning my first birthday party for Aspen (a Central Park picnic), and training for a 10k (need to throw some health in there somewhere don’t we!). For me writing is like exercise-a mental release. I write/blog because I enjoy it – not to showcase every fine detail.
I’ve also found a knack for recipe adapting. A few weeks ago I created my own version of a cucumber/shrimp sushi roll. Much to Dans disgrace (an authentic sushi eater) I decided to use sea salted seaweed, cooked shrimp, sliced cucumber, cauliflower rice and low sodium soy sauce to make my own version (and low calorie/fat version) of sushi. I made Dan try it (not a cauliflower kinda guy) and though he agreed it had a great crunch factor-it wasn’t sushi.
I on the other had loved everything about it. I’ve even started putting chopped salad in the seaweed paper for an additional crunch.
