I have to admit I’m finding cooking/baking quite therapeutic, but I have to be careful. I have no self control. NONE. So when I bake I’m careful to only make enough to serve 2-4 people and stash any leftovers in the freezer.
Aspens like the hungry caterpillar whose always hungry and NEVER full, so I wanted to make something healthy that we could both enjoy. We decided to make chicken soup and ice pops. Now not to toot my own horn here, but this soup was absolutely delicious.
As the kitchen was already a mess, I decided to make a Psyllium Husk pancake to pair with lunch. It contained 1/2 a cup of cauliflower rice (pre-cooked), 3 egg whites and 2 tbsp of Psyllium Husk whisked and fried (I used avocado oil spray). There’s a ton of modifications on the web if you Google “Psyllium Husk” recipes.
So let’s start with the verdict of the pancake: It didn’t really taste like a pancake. It was lumpy like a veggie burger consistency. I liked it but I didn’t love it (and that took me finishing it to realize. It’s like that one guy you dated in college-you like him but you just don’t love him). In the future I would modify the recipe.
As for the soup, this is going to be a new favorite!
Ingredients
-2 tbsp Olive Oil Or Spray (we used spray)
-4 large carrots (feel free to add more veggies)
-4 stalks of celery
-8 cups chicken broth
-1 white onion
-3 Garlic cloves (if you don’t have this use a tsp of minced)
-2 bay leaves
– Thyme (just a sprinkle)
-Salt/pepper (to taste)
-Chicken Breast (Baked, Cooked and shredded)
Instructions
1) Dice up carrots/celery and onion and heat olive oil in a large pot. Add olive oil (or spray) and add carrots, celery and onion. Let cook for 7 minutes until veggies become soft and the onion becomes translucent. Add Garlic and let cook for an additional 30 seconds.
2) Add bay leaves, thyme, salt, pepper, broth and chicken breast to pot and let simmer.
3) Keep an eye on the soup and keep stirring every 15 minutes or so. After 35-40 minutes take out the bay leaves and serve!

- Two good yogurt mixed with SF white chocolate syrup
- Greek yogurt with blueberries
- F-Factor smoothie mix (I’ll let you know how this turns out)
