Growing up I used to love Tates Bakeshop Chocolate Chip Cookies, I mean who didn’t? They were crunchy and delicious. Especially dipped in milk, or Hot Chocolate. A few days ago Aspen asked if we could make something together, I said yes and then asked him today what he wanted to make. His answer? Healthy Chocolate Chip Cookies! Yes he used the word healthy. So I checked that we had some chocolate chips, and off we went to the kitchen.
Ingredients
- 140g Oat Flour (we used Bob’s Red Mill)
- 1/4 tsp salt
- 1/2 tsp baking soda
- 2 Tbsp Coconut Oil
- 3-5 tbsp Milk of Choice
- 1 Tsp Vanilla Extract
- 4 tbsp Swerve Brown Sugar
- 4 tbsp Swerve White Sugar (can sub regular sugar for both if needed**)
- 1/4 Cup Chocolate Chips (we used Lily’s Chips)
Instructions
- Preheat oven to 380 degrees
- Combine dry ingredients into medium size bowl and mix well
- Add wet and mix until dough starts to form and stick together
- Once dough is formed form little balls and place on baking tray
- Bake for 10-12 minutes and let cool
- Once cooled pair with your favorite milk and enjoy!
