I first came across this Chicken recipe watching “What I Eat In A Day” Videos on Youtube. I was skeptical at how tasty it could be with such little ingredients, but more than delighted with the result. I decided to share it on my instagram feed and a few days later, turned it into this Grilled Lemon Chicken With Greek Salad Recipe.
The combination of Lemon Chicken and Feta just really worked! It’s so simple to make, with such little ingredients. You can also pair it with a low carb wrap to get in a healthy source of carbs. My favorite wraps are currently Mr Tortilla or Tumaro’s. They taste indulgent without the added calories or carbs. I know that I may sound like a broken record, but I think that we are so lucky living in today’s world where there are healthy alternatives for everything.
INGREDIENTS
- 1 PKG Chicken Cutlets
- Lemon Juice
- Lemon Pepper seasoning
- Italian Seasoning
- Feta Cheese
- Romaine
- Cherry Tomatoes
- Balsamic Vinegar (optional)
How To
- Spritz olive oil spray onto your indoor grill, if you don’t have a grill you can also use a frying pan.
- Mix lemon, Italian seasoning and Lemon Pepper Seasoning into a Bowl.
- Take each piece of chicken and dip into lemon pepper mix
- Once coated place chicken onto pan
- Once chicken is starting to brown, flip once and repeat twice
- Turn heat off pan and let chicken cool
- Chop romaine, tomatoes, and feta and dress with balsamic
- Top salad with chicken and enjoy!
