Cranberry and Goat Cheese Salad

I feel silly calling this salad a recipe and maybe even sharing it on the blog? But it’s too delicious not to share and perfect for Fall.

I was inspired by my favorite salad at Kitchen Kabaret on Long Island. There are also a ton of modifications that you can add (Apple, pecans, pumpkin seeds..whatever floats your boat). The serving size is for one, and trust me when I say that you won’t miss the dressing on this one! I paired it with one of my favorite low carb wraps and put it in my salad container that I found on Amazon

INGREDIENTS 

• Mixed greens of choice (I used iceberg/arugula)
• 1/4th cup crumbled goat cheese
• 1/8th cup reduced sugar cranberries
