I should have gone back to bed the moment there was egg white floating in my flipping cup of tea yesterday.
It’s been quite a week in this household – hence my silence. Aspen’s 6th birthday is less than 10 days away. To celebrate I’ve been an emotional train wreck looking at baby pics and diving deep into pints of ice cream. Kid you not.
I know I’ve really neglected posting photos and sharing meals on the blog this week, but if you follow me on Instagram @thebritishblueberry you will see everything tracked there! In addition I decided to share some of my favorite meals below. For some very odd reason, I’ve started to get sick of seaweed, cauliflower rice and F-factor smoothies, forcing some creativity into the mix.
Breakfast parfait:
1 cup mixed berries, 1 Fage 0% Greek Yogurt, 1 serving Progranola
What I love about this meal: It’s sweet and satisfying. Keeps me full way into the afternoon!
GG’s and Egg Whites
I love having this for lunch when I’m not craving a salad. I’ll be the first to admit that GG crackers took a while to get used to. What I do is run them under water for 5 seconds and pat them with paper towel. It forms them into a bread consistency. I topped mine with Marmite which is a British spread.
Lettuce Wrap
4 oz turkey breast, lettuce, tomato and a slice of FF American cheese
What I love about this meal: No wrap no problem! Seriously. I did not miss the wrap at all. For an extra treat add avocado into the mix. Its delicious
Crepini Tuna Open Taco’s
If you’re a regular on the blog you know I love Crepini. I usually eat these sweet with my favorite syrup (choc zero) but this was a game changer. I will certainly be using these as taco shells/wrap alternatives going forward.
